Long and thin cut from the abdominal region of the ox, the flank is an extremely versatile meat with very visible fibers. Widely used in Chinese cuisine wok dishes or enjoyed BBQ'ed as a delicious steak. It is recommended to slice the flank against the fiber to maintain its softness. This Flank does have the fat cap on.
