• Only 160-200Kg Side Weights - ensuring perfect consistent size primal cuts, allowing you to have a good thick steak cut when doing 300g - no one wants a thin steak!
• European Beef Grading Scale - only U & R's, with a Fat Class 4 rating - giving a well-rounded, consistent eye muscle, ideal for steak cuts
• We have one master butcher daily inspecting every carcass that comes in from our slaughterhouse, we only select the top 5% which we believe will be "John Stone Standard", all coming from local farms in close vicinity
• John Stone invested 12.5 Million Euro into their impressive Dry Aging facility - a perfect blend of humidity, temperature and air flow to ensure the correct formula for Dry Aged Beef, NO salt is used
• The Beef is extremely consistent due to the consistent temperate weather, a lot of rain great for the grass to grow, just unlucky for the John Stone family who live their life in raincoats!!!
• The Breed will either be Angus or Hereford, or a cross breed with Angus so that we can select the best beef for our customers.
