Made from boneless pork leg, carefully trimmed and flattened into its signature “baffe” shape. Rubbed with a blend of juniper, bay leaf, garlic, and pepper, then cold-smoked over beechwood. Cured for over 5 months in Alpine air, developing a deep, elastic texture and smoky, herbaceous aroma.
